MARKETS: Meet Mitko with St. Pete Microgreens

Originally from Bulgaria, Mitko moved to the Delaware beach in 2014. In 2019, suffering from various illnesses, he looked for something to boost his immune system. He stumbled upon microgreens, which he researched thoroughly. 

Microgreens are young vegetable greens that are approximately 1-3 inches tall. They have an aromatic flavor and concentrated nutrient content and come in a variety of colors and textures. Unlike larger herbs and vegetables that take weeks or monthsto grow, microgreens can be harvested and eaten in 7-10 days.

Despite their small stature, microgreens actually boast a more intense flavor than larger vegetables and herbs. Microgreens are a rich source of phytonutrients and antioxidants, vitamins and minerals. Mitko bought seeds, grew and ate a small microgreen salad with each meal. He soon felt an improvement in his health, and started supplying his friends with these microgreens.When he moved to St. Petersburg in 2021, Mitko continued growing a variety of the delicious nutritious sprouts and joined the Corey Sunday Market and the Fresh Market at Wiregrass in “New Tampa” as a weekly vendor on the first and third Saturday each month. They are light weight and last well for a few days once harvested, if kept cool and refrigerated in the clear plastic containers they come in.
